These greek chicken burgers are filled with bits of feta and spinach. They are perfect on top of a salad, or in a regular burger bun or in a pita pocket.
1 cuptzatziki saucepre-made in grocery store produce section
1cup hummus
1 cup shredded romaine lettuce
1/2 cupthinly sliced cucumber
1 tomato thinly sliced
Instructions
Preheat oven to 375 degrees.
In a large bowl, mix the ground chicken, egg, feta, spinach, panko breadcrumbs, garlic powder, salt and pepper. Mix until well combined.
Coat the bottom of a large pan with a generous amount of olive oil.
Divide the mixture in 4/5 patties, depending on how big you want them.
Sear each burger for 2-3 minutes per side until golden.
Transfer to a cookie sheet and finish cooking in the oven for 10-12 more minutes.
Spread hummus all over the inside of the pita.
After the burgers are cooked, let them rest for a few minutes.
Stuff each pita with the chicken burger, lettuce, cucumber and tomato. Drizzle tzatziki sauce on the top. Serve extra sauce on the side for dipping.

Substitutions:
If cutting down on carbs, use almond flour instead of panko breadcrumbs
If cutting down on carbs, use whole leaves of butter lettuce in place of the pita bread
Get creative with the ingredients to serve the burgers with, red onion, dill pickles, banana peppers or tabuleh are great examples of other fun toppings that will go with this perfectly.
